Oh gosh it's been so long that I haven't blogged anything. A lot has happened and I am now back ready to revive my blog. I still love and have a passion for food, cooking and eating them. I guess I will start of by posting a class I have taken a few months ago. I was fortunate enough to get an open seat the morning of day course that had been booked for 6 months! A French Macarons Class! I've only eaten them and how I've only dreamed of making them. My dream came true! I do have cookery books and have only read them and drooled over photos. It looked and sounded very difficult to make. I'm glad that I got to learn hands on. This lovely gems are so tedious to make. Loads of steps but the finished product is well worth the time. The recipe we used came from Chef Pierre Hermes book and ooohh was it ever so delicious. We made purple lavender, orange, green mint, and white coconut with chocolate ganache.

Hello, I'm Back!
Hello to all my lovely blogger friends. I've been out of the loop and was on an extended hiatus with my 2 children and our little dog. My children and I are on a path of healing and mending our hearts. Unforeseen circumstances had shaken our entire household a few months ago. I am a mother and father to my babies at this present time. For awhile a couldn't bring myself to cook in our kitchen. We have also moved out of our house to a flat/apartment which is a place we now call HOME and LOVE. Most of the meals I have cooked were semi homemade and nothing from scratch and couldn't bring myself to blog about them. The reason why I started this blog 2 years ago was to help with my healing process with the loss of someone very important in my life. I've met some wonderful supportive people who enjoy, love food and cooking as much as I do. Now I'm back ready to carry on with this new life and continue with this new healing process for my children and I. I hope you are all still here to follow our adventures and journey in cooking. : )

At Postino Wine Cafe With The Ladies
So I was able to go out to dinner with my sissy and girlfriends last Friday. This dinner was long overdue. We've all been so busy with our children and family and a nice relaxing dinner such as this was well needed. We went downtown to a place called Postino Wine Cafe. We sat outside the patio which was perfect. The weather was perfect and the evening was beautiful. The atmosphere was great and the tunes they were playing was perfect as well. My sissy have been wanting to take me to this place since my birthday last year because of their bruschetta but we didn't really get a chance.
We had such a good time and just laughed and laughed for hours. The ladies also laughed at the word tunes because I told one of the server that I loved the tunes that they were playing instead of in their minds I should have used the word music.. Ha ha ha! : )
I love bruschetta and this is my bruschetta board..
You can choose four different one's and each bruschetta was cut into four little slices..
I ordered the Fresh Tomatoes with Mozzarella & Basil..
Prosciutto with Figs & Mascarpone..
Ricotta with Dates & Pistachios (I had it without the pistachios)..
Burrata, Bacon, Arugula & Tomatoes..
Oh my gosh! Yummmm, they were soooooo good! I ate the entire board! Well, not the board just the bruschettas on it.

Warm Artichoke Spread, Brie & Apples with Fig Spread, Salami with Pesto, Fresh Mozzarella with Tomatoes and Basil, and Smoked Salmon with Pesto & Capers..
They are all soooooo good!!! We had another board and I didn't get to take a photo of it. My girlfriend had the cheese board as well..
Three Artisan Cheeses served with nuts, fruits and toasted MJ breads..
I love this place and their Bruschetta. I will definitely be coming back here again with the Hubs, family and friends. I highly recommend that you visit Postino Wine and Cafe if you've got one near you. Everything about the atmosphere, the staff, decor, ambiance, and music it's just the perfect place to hang out, relax and unwind. : )

Bulgogi (Korean Barbecued Beef)
This spring season has just been kicking my bum and not only mines but my children as well. My children both have asthma and when allergy season strikes it strikes the entire household. My little one's had fallen ill due to allergies and breathing problems. I have been nursing them lying awake day and night making sure they are breathing and not out of their sight. They are both feeling much better now
Now its my turn. That's how it usually goes kids are healthy, send them to school, they catch something from other children, bring it home, mummy takes care of them and when all is well, I then start to feel unwell and I've caught the bug. It's a long journey for me back to my normal self since I am also dealing with my own lung issues. When you can't breath nothing else matters and it's the worst and most helpless feeling in the world. I nurse myself back to health. It's been a struggle to get anything cooking in the kitchen so we've relied on some ready made meals. Everyone in the house has been doing the best they can.
Anyway, I tried to recreate a recipe that we tried a while ago from a Korean restaurant called Bulgogi (Barbecued Beef). When my son first tried this dish he loved it and he's our picky one. My darling daughter's more adventurous with food so she's much easier to feed. Here's how our Bulgogi turned out.

Ingredients
2 sirloin steak
2 cloves garlic minced
half an onion diced
1/4 cup soy sauce
1 1/2 tablespoon sesame oil
1 tablespoon brown sugar
salt and pepper to taste
some coriander (cilantro) leaves
2 tablespoon olive oil
Method
Slice the steak into small strips I just chopped mine up. Combine all of the ingredients in a bowl and let the steak marinate for an hour cover it in cling film and leave in the fridge. I couldn't be bothered to wait for an hour so I didn't marinade. After I've created the marinade I mixed it into the steak and placed it on a frying pan with the olive oil over medium heat. I fried the steak until the meat has cooked and sauce have reduced. Ready to serve over rice.. : )

Sticky Lime Chicken
This is another recipe that my chic-a-dis and I made during spring break. I love being in the kitchen with them cooking and experimenting (playing) with recipes. We were working with ingredients that we've already got in our pantry and fridge so there was no need for a trip to the grocery store. My babies love dishes that are savoury and citrusy. Oh, and did I say sweet? Well not too sweet just a hint of it if it's not dessert. The honey in this recipe gave it just that. So what I'm getting at is that my little one's love savoury, citrusy, salty, sweet combination.
Ingredients
4 skinless and boned chicken breasts
zest of one lime
juice of one lime
1 1/2 tablespoon honey
1 tablespoon olive oil
1 garlic clove, minced
pepper
Method
Preheat oven to 375F.
Place the chicken breasts in a roasting pan. Mix together the lime zest, juice, honey, oil and garlic in a small bowl. Pour the mixture on the chicken and season with pepper. Place in the oven and baste every 10 minutes. Cook for 35-40 minutes until the chicken is tender and there are no pink inside. As the chicken cooks the liquid in the pan will thickens, it will give it that sticky coating. Once the chicken is cooked rub the chicken on the pan to get the rest of the tasty sticky juice on both sides.
Serve it with veg or rice. Better yet serve it with both.

Churros With Cinnamon Sugar
It was spring break last week and my darling daughter was home from school. My chic-a-dis had a craving for churros, so we were in the kitchen making our very own instead of going out to a restaurant and ordering them.
A churro is sometimes referred to as a Spanish doughnut and in France choux pastry. It's quite popular in Spain, France, Philippines, Portugal, Latin America and the United States. They can be eaten for breakfast, snack or dessert with hot chocolate, coffee or tea. Well, just about anything you want to drink it with really. There aren't any rules. We like to dip ours in melted dark chocolate.
You'll need a piping bag and a large star shaped nozzle tip.
Ingredients
3 tablespoons butter
2 tablespoons caster sugar
1 cup all purpose flour
2 large eggs, whisked
pinch of salt
vegetable oil to fry them in
Cinnamon Sugar
6 tablespoons caster sugar
1 tablespoon ground cinnamon
Method
Place sugar and butter in 2/3 cup water in to a small saucepan and bring to a boil. Add the flour and salt to the boiling water remove from heat and mix with a wooden spoon until the mixture has turned into a soft moist dough. Let it cool.
Add the beaten egg a little at a time. Cover and place in the fridge until completely cooled. Fill a large saucepan with vegetable oil. Just enough oil to submerge the choux or churros. Use the wooden spatula and place the dough in the piping bag. Squeeze out any length you want out of the piping bag into the oil and snip with scissors. Fry until golden brown and set it on a plate with paper towels to absorb the oil.
On a separate plate mix the cinnamon and sugar. Roll the churros around the cinnamon and sugar until coated.

Chocolate Strawberry Pavlova
Here's another strawberry recipe that we love. This has been a favourite dessert that my two sweet chic-a-dis love to make. This is the second time they've made this dessert for me. The first time was for my birthday a year and a half ago. This recipe was inspired by Nigella's chocolate raspberry pavlova. We love it with strawberries. My children made this last week with very little supervision. My daughter beat the egg whites, added all of the ingredients and chopped up the chocolate chips. My son beat the cream into a nice whipped cream to be added once the meringue has cooked and cooled. I helped them place it in the oven and remove it from the oven. It was nice and perfect! Soft,chewy on the inside and crispy on the outside.
Ingredients
for the meringue base:
6 egg whites
1 cup granulated sugar
3 tablespoons unsweetened cocoa powder, sifted
1 teaspoon balsamic vinegar
2 ounces of bittersweet chocolate finely chopped
for the topping:
2 1/4 cups heavy cream
a small carton of fresh strawberries chopped
2-3 tablespoons coarsely grated bittersweet chocolate (we had small chocolate chips that we couldn't grate so we it was chopped into smaller pieces.
Method
Preheat oven to 350F and line baking sheet with parchment paper.
Beat the egg whites until satiny and peaks form. Beat in the sugar spoonful at a time until the meringue is stiff and shiny. Add in the cocoa vinegar and chopped chocolate. Then gently fold everything until the cocoa is thoroughly mixed in. Mound onto a baking sheet in a fat circle approximately 9 inches in diameter, smoothing the sides and top. Place in the oven, then immediately turn the temperature down to 300F and cook to about an hour or an hour and fifteen minutes. When it's ready it should look crispy around the edges and be dry on top. The center should feel soft. Turn off the oven and open the door slightly and let the chocolate meringue cool completely.
When you're ready to serve. Place it into a flat plate. Whisk the cream till thick but still soft and pile it on top of the meringue then scatter over the strawberries and rain over with the chopped chocolates.

Strawberry Bruschetta
I mentioned with my previous post that there was a sale on strawberries so I've been creating some strawberry dishes. Here's another strawberry pairing and nibbles that we enjoy, a strawberry bruschetta. It's the second one this week. I started out with a recipe for Strawberries with balsamic vinegar. I love the sweetness of the strawberries and sugar, the sharp taste of the balsamic, and a very mild heat of pepper. Flavours that wake up your pallette. It's not only delicious its also quite refreshing and has become my chic-a-dis favourite. They have a lot of favourites : )
Add a spoonful on sliced baguettes its delicious...
You can't just have one even if you try. You'll want more...
It's quite nice too eaten by itself as a dessert. : )
Ingredients
A carton of strawberries
2 tablespoons sugar
5 tablespoons balsamic vinegar
pepper to taste
Method
Chop up the strawberries.
Mix sugar and balsamic vinegar in a bowl.
Add the strawberries and mix all together.
Season with a tad bit of pepper.
You can't just have one even if you try. You'll want more...
It's quite nice too eaten by itself as a dessert. : )

Meatzza Random Recipe Challenge
For this months Random Recipe Challenge Dom at Belleau Kitchen is celebrating his 3rd year of Random Recipe blog challenge. We're to choose a recipe book and open to a random page and create the dish from that page. My cookbook for this challenge is Nigellissima. I have been wating for this book for several months now since it had just been released a week ago in America. My random page happens to be a recipe called Meatzza and here it is..
I made two pans..
My pans are 8 inches, about 3 inches smaller than what was suggested which was 11 inches so the meat was a lot thicker. I doubled up the recipe which made it even thicker.
After I've sliced it into portions the Meatzza resembled a Meatloaf because of its thickness had I used the correct size pan it would've been thinner for the meat to resemble as the crust. The way Nigella intended it to be. I did have the correct pan size I don't know why I didn't use it, just forgot about it. The ingredients are quite similar of a meatloaf. It tasted like it as well. The dish had mixed reviews from my judges and myself. There was a no, two yes, and one confused. I'll be making this again with the correct pan size, it should make a thinner minced meat crust to see if my "no and confused one" will change their mind and my yes's prefer it. : )

Ingredients
1 pound ground beef
3 tablespoons grated parmesan
3 tablespoons bread crumbs
3 tablespoons chopped fresh parsley
2 eggs lightly beaten
1 clove garlic peeled
salt and pepper to taste
butter for greasing
1 x 14 ounce diced tomatoes/drained
1 teaspoon garlic flavoured olive oil
1 teaspoon dried oregano
4 ounces fresh mozzarella (not buffalo) halved then sliced
few leaves fresh basil
Method
Preheat oven to 425F
In a large bowl using your hands, combine beef, Parmesan, bread crumbs parsley, and eggs. Grate in the garlic and add some salt and pepper. Do not over work it , just lightly mix together, or the meat will become compacted and dense.
Butter a shallow round baking pan of about 11 inches diameter and turn the meat into it, pressing the mixture lightly with your fingers to cover the bottom as if the seasoned ground meat were your pizza crust.
Make sure you've drained as much runny liquid as possible out of your can of diced tomatoes, then mix the tomato with the garlic flavoured oil, oregano, and some salt and pepper, and spread using a rubber spatula, lightly on top of the meat base. Arrange the mozzarella slices on top and then put in the oven for 20-25 minutes.
Remove from the oven and let it sit for 5 minutes, then adorn with some basil leaves and bring it to the table before cutting into wedges, like pizza.

Strawberry Short Cake With Dark Chocolate
This is one of my babies favourite. They love strawberries so much and this weekend there was a sale on strawberries at the supermarket. There's very little effort in creating this wonderful dessert and my little chick-a-dis had a fun time creating their own.
We used a store bought cake individually portioned, sliced the strawberries, added some whipped cream and drizzled it with dark chocolate which we melted. Voila! A very delicious dessert. My babies made this for me. : )
This has been my quick go to dessert when pressed for time. Look at all of that chocolate goodness, yum...

Chicken Fricassee With White Wine and Mushrooms
I'm back in my kitchen, YAY! A while ago I mentioned I got an automatic pressure cooker. I was a bit scared at first. I remember seeing one that was not automatic on a stove top hissing and shaking with steam coming up from the lid like the one you would see from an old steam engine train but much more with force. This automatic one has much more safety features and I'll admit I was a bit frightened getting started with it.
This was my first go with the cooker and the recipe was Chicken Fricassee. I haven't had this dish before and I'm not sure if it's meant to look like this either. I only have a photo copy of its recipe page. It turned out alright. The recipe came from a book titled Great Food Fast a pressure cooker cookbook. The cooker itself was amazing. I didn't have to thaw out the chicken breasts I added everything in the pot inside it and pushed the poultry button and our meal was done in 15 minutes. Had the chicken been thawed the cooking time for it on low would be 8 minutes and 4 minutes on high. The prep time says 15 minutes I think it took me less than that.
What I learned from my first time using a pressure cooker is that when I cooked the frozen chicken it sucked out all of the liquid out of it and the chicken breast had shrunk. It was smaller than the palm of my hand! The chicken was also not tender as the one's I've tried before that was cooked from a pressure cooker as well. It may have been that the setting was too high. I had it on normal maybe I'll try low next time. Anyway, I'll fiddle with the cooker a bit more. : )
Ingredients
4 boneless chicken
2 tablespoons all-purpose flour
salt and pepper
2 tablespoons butter or margarine
1 yellow onion, thinly sliced
8 oz of button mushrooms halved
1/2 cup chopped celery ( I didn't add this)
1 tablespoon minced garlic
1 1/2 cups chicken stock or broth
1/4 cup dry white wine
1 teaspoon lemon zest
1/2 teaspoon poultry seasoning
1 tablespoon cornstarch, mixed into 1 tablespoon water
1 cup sour cream
3 tablespoons chopped fresh parsley
Method
1. Toss chicken in flour that has been generously seasoned with salt and pepper until each breast is lightly coated.
2. With the cookers lid off heat butter on high or brown until melted and sizzling. Place chicken breasts in cooker and sauté until lightly browned about 5 minutes.
3. Add onion, mushrooms, celery, garlic, chicken stock, wine, lemon zest, and poultry seasoning. Securely lock the pressure cooker's lid and set for 8 minutes on high.
4. Perform quick release to release the cooker's pressure.
5. With the cooker's lid off set to high or brown. Stir in the cornstarch mixture, and simmer for 2 minutes, or until sauce is thickened.
6. Turn off heat, and stir in sour cream. Top with fresh parsley and season with salt and pepper to taste before serving.
This was my first go with the cooker and the recipe was Chicken Fricassee. I haven't had this dish before and I'm not sure if it's meant to look like this either. I only have a photo copy of its recipe page. It turned out alright. The recipe came from a book titled Great Food Fast a pressure cooker cookbook. The cooker itself was amazing. I didn't have to thaw out the chicken breasts I added everything in the pot inside it and pushed the poultry button and our meal was done in 15 minutes. Had the chicken been thawed the cooking time for it on low would be 8 minutes and 4 minutes on high. The prep time says 15 minutes I think it took me less than that.
What I learned from my first time using a pressure cooker is that when I cooked the frozen chicken it sucked out all of the liquid out of it and the chicken breast had shrunk. It was smaller than the palm of my hand! The chicken was also not tender as the one's I've tried before that was cooked from a pressure cooker as well. It may have been that the setting was too high. I had it on normal maybe I'll try low next time. Anyway, I'll fiddle with the cooker a bit more. : )
Ingredients
4 boneless chicken
2 tablespoons all-purpose flour
salt and pepper
2 tablespoons butter or margarine
1 yellow onion, thinly sliced
8 oz of button mushrooms halved
1/2 cup chopped celery ( I didn't add this)
1 tablespoon minced garlic
1 1/2 cups chicken stock or broth
1/4 cup dry white wine
1 teaspoon lemon zest
1/2 teaspoon poultry seasoning
1 tablespoon cornstarch, mixed into 1 tablespoon water
1 cup sour cream
3 tablespoons chopped fresh parsley
Method
1. Toss chicken in flour that has been generously seasoned with salt and pepper until each breast is lightly coated.
2. With the cookers lid off heat butter on high or brown until melted and sizzling. Place chicken breasts in cooker and sauté until lightly browned about 5 minutes.

Banana Flambé with Grand Marnier
This is really a nice treat to have anytime of the year. At least I'll have it any season there's something so comforting about it. The kiddies wanted some ice cream so I thought mummy would make it a bit more posh. I had some bananas on hand and I figured instead of making them banana split, which they would've loved anyway why not have them try one of my favourites.
Banana Flambé
Flambé is French which means to drench in liqour and ignite. I'm not one to play with fire so I did this part outside of my kitchen with adult supervision, lol ; ) The fire burns the alcohol off but leaves a nice flavour of the liqour and gives the bananas a beautiful glaze.
For my kiddie version I left out the alcohol. I served it over vanilla ice cream with wafer thin specks of semi sweet chocolate. They loved it : )
Ingredients

Do this with caution in my case I took my skillet out to the backyard.. Better to be safe and voila! Add to your ice cream..

Spruced Up Vanilla Cake
This recipe came from Nigella's Christmas book. We had 2 Thanksgiving dinner to go to so I made this one for my sissy's dinner party. The bundt mould has a train that goes around the bottom of the spruce tree. It doesn't show on mine because I didn't spread the batter towards the edges. Most of it was in the middle so the cake has elevated in the center. I'm pleased with how it turned out and this is nice to pair up with white wine, coffee, tea or champagne.

Ingredients
2 sticks (16 tablespoons) soft butter, plus more for greasing or use a nonstick pan spray
1 1/2 cups sugar
6 eggs
2 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1 cup plain fat free yogurt
4 teaspoons vanilla extract (I've used my fancy one for the occasion, madagascar vanilla bourbon)
1-2 tablespoons confectioner's (icing) sugar
Method
Preheat oven 350F and put a cookie sheet in at the same time. Butter or spray your large, regular or fir bundt pan thoroughly.
Either put all the ingredients except the confectioner's sugar into a processor or mix together by hand or a free standing mixer as follows:
- Cream together the butter and sugar in a large mixing bowl until light and fluffly.
- Add the eggs one at a time, whisking each one in with a tablespoon of flour.
- Fold in the rest of the flour, and add the baking soda, yogurt and vanilla extract
Pour and spoon the mixture into your greased pan and spread evenly. Place the pan on the preheated cookie sheet in the oven and bake for 45-60 minutes until well risen and golden. After 45 minutes, push a cake tester into the center of the cake. If it comes out clean the cake is cooked. Let it sit out of the oven for 15 minutes. Gently pull away the edges of the cake from the pan with your fingers, then turn out the cake, hoping for the best.
Once cool, dust with icing sugar pushed through a small tea strainer, to decorate think fresh snowfall on the alps.

Black Forest Gâteu / Tea Time Treats Challenge
For the month of November Tea Time Treat Challenge hosted by Kate from What Kate Baked and Karen from Lavender and Lovage the theme is celebration cake to celebrate their one year Tea Time Treat birthday. One of my favourite celebration cakes are birthday cakes. I mean any cake's my favourite, but the joy I get growing up as a child and to this day of being presented with a cake and friends and family gather to sing and celebrate your birthday is one of my happiest moments.
Now that I'm learning (but rather slowly) to bake cakes, I now have kiddies to bake for and just love seeing their eyes light up on their birthdays with joy and excitement over a birthday cake that mummy had baked for them brings so much warmth and joy to my heart. Right, enough of that.
My entry this month is something I am very proud of and that I've baked for the very first time. It's a Black Forest Gâteu / Cake that I made for my daughter upon request for her 12th birthday earlier this year. She wanted her cake to look just like the cake based on a video game that her and her friends play where at the end of the game the character receives a cake. Black Forest is her favourite so I've combined the two together. Black forest cake inside and the video game design on the outside. Here's the link to this previous post Portal Black Forest Cake.
I'm entering this Cake for this months Challenge..
1/2 cup vegetable oil
3 large eggs
5 tablespoons unsweetened cocoa powder (will need to divide 3tbs and 2tbs)
3/4 cup cherry pie filling
1 (12-ounce) container frozen nondairy whipped topping, thawed
Garnish: 2 bars of your favourite bittersweet dark chocolate (one of mine is Ghirardelli )
Maraschino cherries
Method
1. Preheat oven to 350°. Spray 2 (9-inch) cake pans with nonstick baking spray with flour.
2. In a large bowl, whisk together cake mix, chocolate milk, oil, eggs, and 3 tablespoon of cocoa until smooth. Divide batter evenly between prepared pans. Bake for 20 to 24 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 15 minutes. Remove from pans, and cool completely on wire racks.
3. Spread cherry pie filling between layers.
4. Add 2 tablespoon of cocoa powder to whipped cream to add a bit of brown then spread topping over top and sides of cake.
5. Blitz 2 bars of bittersweet dark chocolate in the food processor.
6. Gently press chocolate crumble onto sides of cake and top of cake. (I slapped mine on...lol) Top cake with small whipped cream circle using cake decorator tip # and cherries. Store in refrigerator.
Makes 1 (9-inch) cake

Chicken Casserole / Random Recipe Challenge #22
For this months challenge Dom at Belleau Kitchen had us count our cookbooks to our random birthday number. What ever the number is that's the cookbook you'll cook from. My number is 16 and my count happened to land on Sally Bee once again. I haven't got quite a large selection of books as of yet so I might be going through similar books for the challenges from time to time. The best thing about Dom's challenges are the fact that I get to open my book on a random page and challenge myself to prepare dishes I haven't made before. So, the random page I ended up with was Chicken Casserole. I haven't made chicken casserole just eaten them, so this was exciting because I've always wanted to learn how. I'm sure that there are hundreds of version but for now this is Sally's version. It turned out really well, wasn't greasy at all and it felt light in the stomach and comforting for the cold weather. It was tasty and not salty. I did follow her method and had the exact ingredients, mine turned out to be more like a chicken soup rather than a casserole. I don't know what happened there. The family enjoyed it so this is worth a try..

Ingredients
2 tbsp plain flour
freshly ground peeper
sprinkling of dried mixed herbs
4-6 skinless chicken breast portions cut into chunks
2 tbsp extra virgin olive oil
6 rashers (slices) very lean bacon cut into cubes
225g/8oz shallots peeled and halved if large
2 garlic cloves, peeled and crushed
2 courgettes sliced
1 red and 1 green bell pepper deseeded and sliced
300ml/10fl oz/1 1/4 cups white wine (alcohol will burn off during cooking)
*if you prefer this dish without the wine add more stock or non alcoholic grapejuice.
Method
Preheat the oven to 160C/325F/Gas mark 3. Mix the plain flour with some black pepper and dried mixture herbs in a large bowl, dust the chicken breast in the flour and set aside. Reserve some flour for the sauce.
Over medium heat add the olive oil in a large lidded flameproof casserole dish. Add the chicken and bacon and fry until golden. Add the shallots and garlic and saute for 2-3 minutes until softened. Add all the remaining ingredients - the peppers, courgettes, stock and wine. Stir in the reserved flour to add thickness to the sauce. Cover and cook in the oven for about 1 1/2 hours or until chicken is nice and tender.

Glazed Pecans
Pecans are such a nice addition to breads, salads, etc. I buy them at the supermarket glazed. I decided to make my own glazed pecans the other day and I added them to my salad. I just love the sweet, savoury and sharp combination in a salad. This was quite easy to make as well. I only had 1/2 a cup of pecans so my measurements are for that amount of pecans. You can double it up and garnish what ever you like or munch on it by itself. Perfect as a gift as well : )
Ingredients
1/2 cup pecans
1/2 tablespoon butter
1/2 tablespoon dark brown sugar (you can use golden brown sugar)
1/2 tablespoon maple syrup
Method
Preheat oven to 350F. Combine butter, brown sugar, maple syrup in a small saucepan over low heat. Once butter and sugar's melted add the pecans. Cook and stir for 2 minutes or until pecans are coated. Remove from heat and line baking tray with parchment paper. Transfer pecans to baking tray and cook in the oven for 7 minutes. Let stand to cool for 25 minutes. Can be stored in a tight container up to 2 weeks. When giving as a gift write the use by date. : ) Enjoy!

Lemon Polenta/Cornmeal Cake Random Recipe Challenge #21
For this months Random Recipe Challenge over at Dom's Belleau Kitchen it's store cupboard finds. We're to use or find something in our cupboard/pantry that's been neglected that should've been used or cooked ages ago. What a fun and wonderful challenge this is. What I found lurking in the back of my pantry was a package of cornmeal that I purchased a year ago because I wanted to make my first cornbread for Thanksgiving. That didn't happen I went with a store bought bread rolls instead. So the cornmeal's been sitting there for a year now and fortunately it hasn't expired.
I flipped through my cookbooks and found a nice recipe from Nigella, a Lemon Polenta Cake. You can substitute the polenta with cornmeal which is what I did, Yay!
I had a bit of trouble turning it onto the plate it broke a little....
This cake's so delicious you can have it anytime of day. We were going to have it after dinner for dessert and that didn't happen. We ate it first then dinner, lol. We drizzled lemon syrup over it which made it softer, sticky and tangy-much more lemony. The syrup was another recipe that went along with the cake.
Ingredients
For the cake
1 3/4 sticks (14 tablespoons) soft unsalted butter, plus extra for greasing
1 cup superfine sugar
2 cups almond meal/flour
3/4 cup fine polenta/cornmeal
1 1/2 teaspoons baking powder
3 eggs
zest 2 lemons (save the juice for the syrup)
For the syrup
juice 2 lemons
heaping 1 cup confectioner's sugar
1 x 9-inch springform pan
Method
Line the base of your cake tin with baking parchment and grease its sides lightly with butter. Preheat the oven to 350F.
Beat the butter and sugar till pale and whipped, either by hand in a bowl with a wooden spoon, or using a freestanding mixer. My son and I used the wooden spoon method.
Mix together the almonds, polenta and baking powder, and beat some of this into the butter-sugar mixture, followed by 1 egg, then alternate dry ingredients and eggs.
Beat in the lemon zest and pour, spoon or scrape the mixture into your prepared tin and bake in the oven for about 40 minutes. It may seem wibbly but, if the cake is cooked, a cake tester should come out cleanish and, most significantly, the edges of the cake will have begun to shrink away from the sides of the tin. remove from the oven to a wire cooling rack, but leave in its tin.
Make the syrup by boiling together the lemon juice and icing sugar in a small saucepan. Once the icing sugar’s dissolved into the juice, you’re done. Prick the top of the cake all over with a cake tester (a skewer would be too destructive), pour the warm syrup over the cake, and leave to cool before taking it out of its tin.

Spaghetti Pasta With Zucchini, Cherry Tomatoes, Feta and Parmesan Cheese
While a lot of places are beginning to feel the Autumn season sorting out their closest for their cozy sweaters, scarves and boots, It's still summer here. I can't wait for it to start getting cooler. That's when I love being outdoors with my babies going for a walk. People are still wearing their tank tops and shorts around here and there's no sign of cooler weather anytime soon.
Last night I put together something very quick and summery for dinner with the help of my sweet boy of course. I don't know what I'll do without him when he starts going to school. Anyway, this recipe is pretty much one of those "Add as much as you want or need" so there's no fuss and measurements.
Since I started learning how to cook, bake, read more and more cookbooks, learning more about ingredients such as herbs, spices, oils, and vinegars. I am now even more excited about cooking, baking and experimenting. My son shaved the parmesan cheese it looks like he really enjoyed it : ) There was so much of it on the plate...lol.
Kiddies and I took this photo while we went out for a quick walk after dinner and saw this cloud over at the other neighbourhood. It was about 7pm and it wasn't quite dark yet. It looks much more amazing seeing it in person.
Ingredients
1/2 a box of spaghetti
salt
4 zucchinis/corguettes
some cherry tomatoes
lemen
olive oil
2 cloves of garlic
feta cheese
fresh parmesan cheese
Method
Place the spaghetti in a large pot of boiling water add some salt to the water, cook time suggested on the box. While the pasta's boiling crush the garlic with the flat side of the knife and slice the zucchinis. Sauté the garlic and zucchinis in a pan with olive oil on medium low heat until the zucchinis are soft and translucent. Drain the pasta and keep a 1 cup of water from pot it was cooked in. Keep the water if the pasta gets a little dry add a tad bit. Mix the pasta, zucchinis, cherry tomatoes, drizzle of olive oil, squeeze a wedge of lemon or as much as you want in a large bowl. Top it off with feta and shredded parmesan cheese....Yummm
